Malic Acid

Malic acid is a dicarboxylic acid. Its salts and esters are known as malates. It is found mostly in unripe fruits. Uses: To produce an extreme tartness in candy such as MegaWarheads, and Sour Punch candies, used with or in place of citric acid in sour sweets such as Jolly Ranchers and as the salt and vinegar flavor in potato chips.
