Anethole

Anethole, or trans-anethole is an aromatic, unsaturated ether. At room temperature, this compound appears as white crystals, and possesses the distinct licorice flavor found in anise and fennel. It has been measure to be 13 times sweeter than sugar, and, even at high concentrations, is considered to be “pleasant” to the taste. CAS # 4180-23-8
